Gastronomy as a science, an art form, and a way of life came into its own during the nineteenth-century, and Emile Zola could not help but be influenced by this new discipline. His intellectual curiosity was further heightened by his own delight in eating and pretensions of being a gourmet. Zola was so fascinated with food and eating that it infused nearly every level of his fiction, from the mimetic to the symbolic. The purpose of this study is to explain the different ways in which Zola uses food and eating in his writing.Subjects--Topical Terms:

In Chapter One, I discuss the relationship between Zola's literary goals and food as a mimetic and scientific backdrop to his novels. Zola could communicate economic status, social rank and temperament just by presenting how and what particular characters chose to eat.

In Chapter Two, I discuss the impact of the dining room's advent on bourgeois eating habits and apply this to Zola's fiction. After presenting food and eating as mimesis and metonymy and subversions of the bourgeois dining code, I introduce urban and bucolic symbolism of the belly.

Chapter Three is a discussion of the links between food, pleasure and sexuality. The ways in which pleasure in eating is denied to the poor and their attempts to compensate for this lack are first examined. Then, the confusion between alimentary and sexual appetites which can lead to the symbolic act of devouring the other are presented.

In Chapter Four, I demonstrate how Zola uses food to symbolize his beliefs concerning the eternal cycles of life, death and regeneration. He appropriates pagan, agrarian and Christian food symbols and the rhythms of digestion to create a cosmological structure based on food and eating. Understanding this structure helps his readers to better understand his concept of the meaning of life.

The concluding remarks synthesize the four chapters of the study and stress the importance of food and eating in Zola's works. It is essential to understand that, for Zola, when one eats, one participates in the everlasting cosmological process of becoming.
