The goal of this investigation was to quantitatively describe developmental changes in jaw performance for chewing in typically developing infants ranging in age from 4 to 35 months and adults using a 3-dimensional computerized motion capture system. Jaw movement during chewing was tracked in 3-dimensions in 60 typically-developing participants across five age groups (4--6 months, 7-months, 12-months, 35-months, and adults) using circular, reflective stickers (approximately 2 mm in diameter). The resultant jaw traces were subjected to five complementary analytic techniques to provide quantitative descriptions of the performance characteristics and stability of chewing patterns within and across specific ages and consistencies.

Several trends were identified that reflect various characteristics of this dynamic system: (1) There was no difference in working space across the age groups, indicating that there is not a direct relationship between anatomic size and working space. (2) Working space, excursion in the horizontal dimension, and chewing rate increased with upgrades in consistency, indicating that consistency affects masticatory kinematics even in very young children. (3) Excursions in the horizontal dimension did not increase significantly with age, indicating that at the kinematic level of analysis, the findings did not follow the putative course advanced in clinical models. (4) Rate did not increase significantly with age, indicating that even the most novice chewer demonstrates adult-like mastery of chewing in terms of rate. (5) In general, spatial and temporal instability in chewing movement patterns decreased with age, indicating that early chewing does not demonstrate the stability that has been purported in qualitative models of the development of chewing.

The results of this investigation provided a quantitative description of the development of chewing and insight into the ontogenesis of the oromotor system. This quantitative description of early chewing provides the beginning of an empirical database, which may aid in the differential diagnoses of early feeding disorders, provide a context to gauge the severity of disorders, and, as a result, expedite the treatment of early chewing disorders.
