520 $a Health professionals can better understand Asian Americans by examining their diets and the impact of various demographic and physiological factors on them. This study assessed the dietary intake of 383 Chinese Americans living in the Houston, Texas area. Subjects were recruited from Chinese churches. Emphasis was placed on determining the usual intake of total fat, saturated fat, and cholesterol. Elevated amounts of these dietary factors have been found to be associated with a greater risk of heart disease (Dawber, 1980; Grundy, 1986; Lipid Research Clinics Program, 1984). Information on the prevalence of obesity, hypertension, diabetes, hypercholesterolemia, cigarette smoking, alcohol consumption and the use of vitamin or herbal supplements was also collected. The underlying hypotheses of the study focused on determining if there were differences in fat, saturated fat and cholesterol intake between overseas-born (OBCs) and American-born (ABCs) Chinese Americans. Specific demographic and physiological characteristics of each group were evaluated also to see how much they influenced dietary fat and cholesterol intake.
520 $a The results of the study indicated that in this sample, American-born and overseas-born Chinese Americans consumed a similar amount of fat and saturated fat, but OBCs consumed a significantly greater amount of cholesterol than American- born Chinese Americans. A substantial percentage of the sample consumed fat, saturated fat, and cholesterol in amounts considered excessive by national health organizations. The specific factors that appeared to influence the level of cholesterol intake were marital status and children for ABCs, and years in the U.S. and herb and tonic usage for OBCs. However, years in the U.S. was highly correlated with many of the factors.
