Thesis (M.S.)--D'Youville College, 2013.
This study assessed the diet and nutrient intake of adult vegetarians in western New York. Dietary intake was collected using a modified, multi-pass, 24-hour recall. A convenience sample of 30 adults, aged 19-50 years, participated in telephone interviews. Dietary and supplement intake data were analyzed using the diet analysis program Food Processor. Nutrient values were compared with the DRIs for protein, vitamin B-12, calcium, vitamin D, and iron. The majority of vegetarians didn't meet at least 75% of the RDAs, and 100% of the EARs for vitamin B-12, calcium, vitamin D, and iron. More than a third met the RDA and EAR for protein. Results support the importance of nutritional education for vegetarians.
