The purpose of this study was to examine the acculturation of Korean food habits in the United States as affected by the dominant-minority relations of residence area, duration of stay in the U.S., and lifestyle factors. The sample consisted of 191 Koreans residing in the New York City (NYC) or Honolulu areas. The subjects' ages ranged from 18 to 75. The number of years in the U.S. ranged from 1 to 41. Fifty-one percent lived in the Honolulu area; 49% lived in the NYC area. The Korean food habits were measured through food consumption frequency and food-related behavior questionnaires. Selected food habits, either American or Korean, were used to examine acculturation. The dominant-minority relations in residence areas, represented by the number and ethnic compositions of residence areas, influenced acculturation of Korean food habits differently. Korean food habits became less acculturated among those residing in a White-dominant neighborhood. Duration of stay in the U.S. influenced Korean food habits differently, showing acculturation to the U.S food habits reversing back to traditional food habits, then back to acculturation to U.S. food habits. Among the lifestyle factors, the age variable had the strongest influence on the acculturation of Korean food habits.
