A comprehensive school program was evaluated which sought to promote the development of life-long healthy eating habits in children and create a school environment that made connections with the school garden, cafeteria and classroom, linking them to agriculture. Evaluation components included participation in the school lunch program with the addition of farmers' market salad bars, staff perceptions of the salad bars, partnership development among staff involved in the program and the status of nutrition education at the participating schools. Participation in the school lunch program increased with the addition of the salad bars and numerous partnerships developed among those involved.

Two subsequent studies sought to determine the status of gardens in California schools, according to school principals and teachers. Survey research was employed using a questionnaire to assess three areas: (1) current school garden practices, (2) attitudes associated with the use of gardens in schools and (3) barriers to having and using a school garden in academic instruction. Purposes for having a school garden included enhancement of academic instruction and extracurricular activities. Gardens were most commonly used for teaching science, environmental studies and nutrition. Principals and teachers deemed the garden as being not or slightly effective at enhancing the school meal program.

This research identified key areas important in creating a school environment that connects the school garden, cafeteria and classroom, providing evidence to support comprehensive school programs. There is a need for curriculum materials and teacher training for gardening and nutrition. Additionally, efforts should be made to link school food service with gardens, thereby recognizing the potential that school food service has in contributing to the meal choices that students make.
