The prevalence of malnutrition in nursing home residents is said to be between 30 and 85% (Rushman & Feller, 1989). Accurate and timely identification of individuals at risk for malnutrition can facilitate interventions by dieticians and physicians so as to limit deleterious effects on overall health status. Toward this end, reliable measurement methods of food consumption are essential. The present study establishes a reliable measurement protocol for elderly nursing home residents using the "gold standard" of weighed dietary information. Archival data from a larger nutritional study (Wright, 1998) was used to evaluate a subset of 21 nursing home residents between the ages of 65 and 97 years. Data for caloric and protein intake was obtained via weighed food measurements that had been collected over three consecutive days at three different time intervals post admission (baseline, six months, and 12 months). Data analysis based on generalizability theory was used to determine an optimal measurement protocol. Results of the analyses indicated that three consecutive days of weighed food measurement produced a reliable estimate of the individuals' caloric and protein intake at the time of measurement.
