The organic label is an important tool for consumers who wish to purchase foods produced in a more sustainable manner. Before 2001, the exact definition of organic was determined by a number of independent certifying agencies. The determination of what ought to be allowed in organic food was rife with controversy. This dissertation begins by determining whether the NOP's Final Rule conforms to consumer preferences by using survey, contingent valuation and experimental techniques. It concludes with an economic perspective of the efficacy, ethics and external costs of industrialized agriculture, and discusses the role of the organic label in leading to a more sustainable system in a wider policy and business environment.
