This study develops a curriculum and course design that is specifically focused on English for Occupational Purposes in the area of culinary arts. It is based on a needs analysis study. Through academic research and personal experience in this field the needs analysis reveals that the target group's predominant need is in verbal comprehension. Speaking and listening are the most important skills needed, followed by reading and writing skills. Culinary art is a hands-on, or tactile learning field. Oral communication is essential and should be emphasized in a hands-on field such as this.

An English for Occupational Purposes Curriculum and course design is developed based on the results of a needs analysis. The needs analysis consists of information derived from personal experiences in the culinary arts program at Cerritos College, personal work experiences in various restaurants, as well as scholastic research. The curriculum is based on the theoretical principles developed by systemic-functional linguists. One unit of teaching is included as a sample of the method described.
