Chapter 2 shows how exogenous increases in food traceability create incentives for farms and marketing firms to supply safer food by making liability feasible. In my stylized model of a marketing chain composed of farms, marketers, and consumers, unsafe food can be caused by either marketers or farms. The model shows that food safety declines with the number of farms and marketers and imperfect traceability from consumers to marketers dampens liability incentives to supply safer food by farms.

When buyers or authorities are unable to identify the origin of a tainted product, all suppliers, including those that did not cause the contamination often face a downward shift in demand. Traceability can focus the demand impact more specifically. For example, one role of traceability is to identify more precisely the origin of a product, enabling more targeted product recalls. Chapter 3 considers a large number of identical firms whose general reputation is challenged by the discovery of unsafe food. The model shows formally how increased traceability protects the reputation of firms by more effectively targeting the source of contamination and develops the relationships between traceability and the profit maximizing level of food safety for competitive industries, and industry collective organizations.

Chapter 4 measures the willingness to pay for the traceability of cattle in Quebec. Using error correction models and a differences-in-differences approach, I provide the first econometric estimates of willingness to pay for traceability using real price data.
