Thesis (Ed.D.)--Spalding University, 2016.
The health of elementary school-age children is at risk due to increasing obesity rates. This risk is relative to poor nutrition, inadequate health education, and a lack of physical activity. Health education is of single-most importance in combating this problem. Early instruction can provide important health information to the school-aged child. This study examined the effect of such instruction, given over several days in an elementary school setting in an inner-city environment. The instruction addressed healthy snacks, nutrition education (including label reading), and the importance of physical activity. Through the use of pre- and post-education surveys, this study measured the impact of health education on the health knowledge of students. The results showed that health education positively impacts the health knowledge of elementary school-aged children. This study has implications for the war on childhood obesity.
