Gaming has evolved from a sole emphasis on gambling to a complete entertainment package. More than half of the 33 million people who visit Las Vegas each year say they do so for reasons other than gambling (Las Vegas Convention and Visitors Authority, 2011). This dissertation research is an interpretive case study that uses a narrative research methodology to examine how food has been used to gain a competitive advantage. The review of literature on this subject demonstrates the importance the role food has played in the success of hotels, casinos, and other businesses in Las Vegas, Nevada. A popular theory unique to the gaming industry is that restaurant operations can be used to generate more slot play. This viewpoint is particularly applicable in casino markets frequented by repeat clientele, such as the Las Vegas locals' market. The likelihood of incurring substantial food and beverage department losses increases significantly when the restaurants are casino owned and operated. These losses are justified by the theory that restaurant volume is a prime driver for additional casino revenue (Kilby, Fox, and Lucas, 2006). This is a case study of one small, independently owned "locals" casino that uses food as a primary driver to attract and retain customers, both in the casino-owned restaurant and as giveaway items on the casino floor. The results of the study verified that food can be used as a primary driver, but it needs to be coupled with other factors such as consistency, service, employee attitude, and quality to be effective and sustainable. Some concepts, such as the Vendor Partner program, also have a significant impact on the amenity base available for casino patrons as well as community relations and other local businesses.
