Thesis (M.S.N.)--The University of Texas Health Science Center at San Antonio, 1999.
Incidental learning has been documented as a means of learning (Goldberg, 1974; Rieber, 1990; Rieber 1991). Only three previous studies (Guthrie & Sheehe, 1984; D'Onofrio & Singer, 1983; Baron, 1990) have addressed incidental learning in the context of incidental nutrition education. These may be dated and contemporary research is needed to assess this important stimulus in the child's school environment. This study examined one source of incidental learning for children: elementary school reading textbooks.

The purpose of this descriptive study was to assess the content of Texas children's basal reading textbooks from the first and fourth grades to identify food messages, and to evaluate whether or not such references were concordant with nutrition guidelines outlined by the Food Guide Pyramid. A random sample of 1252 pages from first and fourth grade basal reading textbooks was reviewed to identify food references. Textbooks were evaluated for food reference density (number of food references per pages), food reference form (picture or text), and food reference type (according to the Food Guide Pyramid). Comparisons of these characteristics were made between the first and fourth grades. (Abstract shortened by UMI.)
