Post-secondary culinary arts programs accredited by the American Culinary Federation were surveyed to determine the level of computer usage in their respective programs. At the time of the survey, there were 104 institutions nationwide holding ACF accreditation, and each of these institutions was sent a written questionnaire.

Post-secondary culinary arts programs accredited by the American Culinary Federation were surveyed to determine the level of computer usage in their respective programs. At the time of the survey, there were 104 institutions nationwide holding ACF accreditation, and each of these institutions was sent a written questionnaire.

The people to whom the survey was sent were identified as each institution's contact via an official ACF publication listing the accredited programs and contact information. There were 38 institutions that provided usable responses for a 37% response rate. The majority of respondents represented community colleges offering associate's degrees.

The survey responses indicated that computer applications are common in the post-secondary culinary arts curriculum. However, the method of use varies considerably from institution to institution. The ACF core course with the highest rate of computer usage was Menu Planning followed closely by Nutrition.

Opinions of respondents were sought regarding seven different areas from availability of computer support personnel to adequate budgeting for current computer use. The respondents generally agreed that there is an adequate number of computer support staff; however, the most negative opinions were in response to possessing an adequate number of application packages to support the full range of courses offered by the school/department.

Overall, the study concluded that: (1) Computers were used in many of the ACF core courses in post-secondary culinary arts programs. (2) The software used was as a tool, i.e., databases, spreadsheets, word processors, statistics programs, etc. (3) Software was not usually selected or used by any special method but is most often used based on what comes free with the purchase of the computer. (4) The most common brand of computers used in culinary arts education were IBM<super>®</super> compatibles. The hardware most often available in culinary arts programs, excluding computers, was POS systems followed closely by black and white printers. (5) Budget questions were the most difficult to answer as respondents frequently did not have access to this information.
