The purpose of this study was to determine food security status and identify the continuing role of culture in the foodways of low-income elderly living in the Southeastern United States. The study was specific to the purchase and consumption of pork variety meats. Data were collected via telephone interviews. The 316 respondents indicated their health beliefs do not always coincide with actual nutritional status: 38% were food insecure; 9% participated in the Federal Food Stamp Program. The decision to purchase and consume pork variety meats was not linked to food security status: 58% of food secure; 54% of food insecure without hunger; and 65% of food insecure with hunger consumed pork variety products. Within this group, 71% were African Americans; 50% were Caucasians; and 65% cooked these foods for children and grandchildren. The correlation between culture and foodways is still a defining factor in the dietary choices of this population.
