Research has shown that foodborne diseases have been estimated to cause 6 million to 81 million illnesses and up to 9,000 deaths per year. High risk food handling practices, such as not washing raw fruits and vegetables, can lead to increased exposure to foodborne pathogens. Of these foodborne illnesses, 22% are directly linked to produce. Research is lacking as to the specific sociodemographic factors for populations at greater risk for foodborne illness. This study is built upon the concepts of morbidity and mortality rates in relation to daily health behaviors and cultural demographics. This purpose of this study is to elucidate the relationship between the food handling practice of washing raw vegetables and sociodemographic factors over the period of 2002-2003, the most recent data available. To determine the relationship between the independent variables of age, race/ethnicity, gender and geographic region and the dependent variable of not washing raw vegetables, a retrospective cross-sectional study was conducted using data from the 2002-2003 Centers for Disease Control and Preventions' FoodNet Population Survey. Frequency and means, chi squares and logistical regression were used to analyze the data. Results found that consumers of the age group 17 or younger (82.2%), male (78.5%), living in urban conditions (79.3%), and of Hispanic (85.7%) rather than Caucasian decent (75.1%) reported significantly higher rates of washing raw vegetables than their comparison groups. The social change aspect of this dissertation provided data pertaining to populations that engage in high risk food handling practices to be used in food safety educational programs, which in turn could supplement the current educational programs and result in potential prevention of future foodborne pathogen exposures.
