This dissertation investigates the ways in which knowledge is shared and tested within the online brewing community. The study is structured as a series of standalone chapters, similar to the blog posts common in the brewing community, which provide an in-depth examination of the various aspects of knowledge production and dissemination within this community.Chapter 2 presents the background and history of scientific brewing in the United States, exploring the factors that have contributed to its dominance as a form of brewing knowledge in the country. This includes a discussion of the impact of Prohibition and the role of one individual in the development of brewing education in the US.Chapter 3 focuses on the methods used by brewers to create new knowledge, with a particular emphasis on the process of reverse-engineering beer styles. This chapter draws on the researcher's own experiences with this method, as well as the feedback and support provided by the online brewing community throughout the process.Chapter 4 examines the large community of knowledge producers and knowledge bases where knowledge is shared, stored, and presented online. By studying the top ten most popular brewing education blogs, the chapter identifies shared characteristics of these blogs and the relationship between a more scientific layout and blog popularity.Chapter 5 delves into the peer review process within the brewing community, and the emotional responses to different types of knowledge (disputed, undisputed, and new). This chapter seeks to understand how brewers handle the rapidly changing landscape of small-scale brewing knowledge.The dissertation concludes with a reflection on the power of the scientific method and knowledge-producing communities within the brewing community. I compare the online brewing community to other online craft groups. Through these comparisons, I discuss how internet-based knowledge communities can resist prohibitions and thrive after communal knowledge loss. The study also examines the ways in which these online models support a form of knowledge revival within the craft brewery community.
