Hand motor skills, such as using tools, and playing musical instruments, are acquired after birth, and are closely related to the environment. Chopsticks have been common utensils for food consumption by people in East Asia, including China, Korea, Japan and Vietnam. Controlling chopsticks requires fine coordination and adjustment of the hand intrinsic and extrinsic muscles. The study of chopsticks control can improve the understanding the effect of environment to human body and is helpful in clinic, rehabilitation, sports training and robotic. Twenty university students served as subjects. Ten of them were proficient chopsticks users (skilled group) and ten of them had never used chopsticks (unskilled group) prior to the experiment. Six pairs of fine-wire EMG electrodes were applied to the index, middle and ring digitations of Flexor Digitorum Superficialis (FDS_I, FDS M and FDS_R) and Flexor Digitorum Profundus (FDP_I, FDP_M and FDP_R). Two pairs of surface EMG electrodes were applied on the radial side and unlar side of Extensor Digitorum Communis. Subjects performed two separate experiments, 1) using chopsticks to move three different weight blocks (30g, 60g and 90g) from one plate to another one; 2) applying finger flexion force in fifteen finger combinations in randomized order: I, M, R, L, 1M, IR, IL, MR, ML, RL, IMR, IML, IRL, MRL and IMRL (I = index, M = middle, R = ring, and L = little). Finger force and EMG data were recorded synchronously during both experiments. The results showed that 1) force sharing patterns were different between the skilled and unskilled groups; 2) the index and middle finger force enslaving effect (EE) were lower in the skilled group, but the little finger force EE was greater in the skilled group; 3) the muscle activity (EE) of uninvolved finger muscle compartments for FDP was lower in the skilled group; 4) the extensors were very important in controlling finger force and Skilled group users used higher extensor muscle activity for fine finger control. 5) index finger force was the maximum in chopsticks operation. From the results above, we can conclude that increased fine motor skill practice can change the finger force coordination and reduce the force enslaving effect (EE) for uninvolved fingers.
