Thesis (M.A.)--University of Kansas, 1982.
Using Taiwan as the subject of study, this thesis takes an exploratory look at the theory of nutritional pluralism. The approach used was both structural and processual. Throughout the research, the term "nutritional pluralism" was defined as the "heterogeneity in nutritional concepts and practices." Data collected from the fieldwork, contemporary literature, and historical writings were utilized to determine the framework of nutritional pluralism. It was concluded that the folk and classical systems of Chinese nutrition have existed alongside and overlapped with the evolving official nutritional system, which was founded on the imported Western nutrition, in the scene of nutritional pluralism in Taiwan. In addition, the hospital dietetic profession was found functioning as the "agent of incorporation" in the on-going pluralistic culture of food and nutrition. Finally, it was recommended that multidisciplinary research on the socioeconomic and nutri-medical consequences of nutritional pluralism should be conducted, in order to formulate a culturally compatible and more efficient nutritional care plan for the population.Subjects--Topical Terms:
