Three strains of Vibrio parahaemolyticus were isolated from raw oysters (Crassostrea rhizophorae) harvested from the red mangrove (Rhizophora mangle) area in Puerto Rico. They were analyzed for the production of siderophores, an important virulence factor. All of the strains produced siderophores in response to iron limitation in synthetic medium, at concentrations of 0.2 and 10 muM FeCl3. No growth was observed in the absence of iron (0 muM FeCl 3) and very little siderophore production was observed at 20 muM FeCl 3. An estimate of the levels of Vibrio parahaemolyticus in raw oysters was determined to be 1.3 x 102 MPN/g and the total population was 1.8 x 105 CFU/g. The Vibrio parahaemolyticus population increased to 1.1 x 10 4 MPN/g when oysters were subjected to temperature abuse (31°C) for 3 hours. The results suggest an increased risk of foodborne illness by Vibrio parahaemolyticus when consuming raw mangrove oysters that have been subjected to temperature abuse.
