The cultural competence of healthcare providers plays an important role in the maintenance and promotion of health for all individuals in the United States. Registered dietitians are clinicians who play an integral role in a culturally competent healthcare system. However, the students who are being trained to become registered dietitians may not be receiving adequate or effective training in cultural competence before they enter the profession. The purpose of this study was to identify student perceptions of the effectiveness of cultural competence training in their dietetics education programs.

The Cultural Attitudes and Awareness Survey (CAAS) created by the researcher was distributed to junior and senior students from Didactic Programs in Dietetics and to dietetic interns in the Midwest. The CAAS included questions related to the relevance and adequacy of cultural competence training in the participants' dietetics education programs, and on their perceptions of specific curricular components and extracurricular experiences. Data were analyzed using descriptive and inferential statistics, including the mean, standard deviation, and one-way ANOVA for data grouped by academic classification.

Participants perceived that cultural competence training in their academic programs was relevant though not adequate. Specific curricular components and extracurricular experiences that were identified as contributing to cultural competence included traveling abroad, learning to prepare foods from a variety of cultures, and observing a dietitian who models cultural competence when interacting with clients.

The results of this study suggest that dietetics students recognize the need for cultural competence training. It also appears that there is a need for increased exposure to cultural competence modeling for these students and continued support for experiences that promote cultural competence. Specific suggestions to achieve these goals include an earlier incorporation of cultural competence training in academic programs and support for international travel and study abroad. As these recommendations are incorporated into nutrition and dietetics programs, future registered dietitians will be more prepared to maintain and improve the country's nutritional health in a multicultural environment.
